How To Cook a Romantic Tapas For 2 On Any BBQ
1 – Which BBQ charred mixed sweet peppers (serves 2):
Equipment needed:
- Any style of BBQ
- Mixing bowl
- Metal tongs
Ingredients:
- 1 x pack of Padron peppers or mini sweet peppers from any good supermarket
- 1 x tsp of sea salt or smoked salt
- 2 x tbsp rapeseed oil
Method:
- Preheat your BBQ to a moderate heat
- Wash the peppers and pat dry on kitchen paper or tea towel
- Add to the mixing bowl and toss with the oil and salt
- Place onto a hot part of the BBQ and cook for around 4-5 minutes on each side until nicely charred and the peppers have softened slightly

2 – BBQ Honey Glazed Chorizos (Serves 2 -3)
Equipment needed:
- Any style of BBQ
- Mixing bowl
- Metal tongs
- Temperature probe
- Serrated knife
Ingredients:
- 1 x pack cooking chorizo (Tesco fire pit range)
- 1 x tablespoon of avocado or rapeseed oil
- 2 x tablespoons of honey or locally made honey
Method:
- Ensure your BBQ is preheated to moderate heat.
- De-link the cooking chorizo and add to a mixing bowl, then add the oil and 1 tablespoon of the honey and toss until well coated
- Add them to your BBQ, laying them the opposite way to the direction of the grill bars
- Cook them for around 3-5 mins on each side (depending on how powerful your BBQ is) until nicely coloured and the sausage has firmed up
- Check the internal temperature of the thickest part of the chorizo has reached 75c
- Transfer to a chopping board and slice with your serrated knife on an angle or as you desire
- Drizzle with the remaining honey and enjoy!
3 – Which BBQ Sourdough Bruschetta (serves 2 – 3):
Equipment needed:
- Any style of BBQ
- Mixing bowl
- Spoon
- Serrated knife
- Chef’s knife/paring knife
- Chopping board
- Metal tongs
Ingredients:
- 1 x unsliced sourdough loaf (Sainsbury’s or M and S)
- 1 clove of minced garlic or 1/2 tsp of garlic puree
- 4 x tablespoons good quality olive oil
- 3 x fresh ripe salad tomatoes (deseeded and diced)
- ½ red onion or 1 large banana shallot (diced finely)
- 1 x tablespoon chopped fresh basil
- Sea salt and pepper to taste
Method:
- Preheat your BBQ to a moderate heat
- Prepare your tomatoes by carefully removing the skin and the seeds with a sharp knife
- Prepare your onion or shallot by finely dicing with a sharp knife
- Chop your fresh basil
- Add the tomatoes to a mixing bowl with the basil and 2 tablespoons of olive oil and season well with salt and pepper.
- Slice thick slices of the sourdough as desired
- Drizzle with 2 tablespoons of olive oil and season with salt and pepper
- Lay the sourdough slices on your preheated BBQ, around the edge so its not too hot
- Cook for around 1 to 2 mins on each side
- Remove from the heat and top with your tomato mixture
- Serve on a plate and enjoy!

4 – Which BBQ Pil Pil style prawns (serves 2):
Equipment needed:
- Any BBQ
- Non-stick frying pan (preferably with a heatproof handle)
- Spatula or wooden spoon
Ingredients:
- 1 x tablespoon rapeseed oil or similar
- 1 x pack of fresh raw king prawns (you can use frozen ones that have been fully defrosted)
- ½ a fresh red chilli (sliced thinly including seeds)
- 1 x garlic clove (crushed and chopped)
- ¼ of a fresh Lemon
- 1 x tablespoon freshly chopped parsley
- 2 x tablespoons unsalted butter
- Salt and pepper
Method:
- Make sure your BBQ is preheated to a moderate heat
- Add the oil to your frying pan and warm to a gentle heat
- Add your prawns and cook for 30 seconds stirring well
- Add the garlic and chilli to the pan and cook for a further 30 seconds
- Add the butter and toss the prawns, baste the prawns with the foaming butter and cook until the prawns are fully pink and white, check they are cooked through by cutting one open if you’re not sure
- Add the lemon juice and season well with salt and pepper
- Add the fresh parsley and serve in a bowl with some crusty bread
5 – Which BBQ cajun and mint charred halloumi (Serves 2 – 3)
Equipment needed:
- Any style of BBQ
- Mixing bowl
- Serrated knife
- Chopping board
- Metal tongs
Ingredients:
- 1 x packet of good quality halloumi cheese
- 1 x tbsp cajun spice mix
- 1 x tbsp freshly chopped mint
- 2 x tbsp of rapeseed or avocado oil
Method:
- Preheat your BBQ to a moderate heat
- Slice your halloumi into thick slices as desired
- Add the rapeseed oil, the cajun spice mixture and the chopped mint to a mixing bowl
- Add the halloumi and toss well to ensure an even coating
- Lay the halloumi slices on the preheated BBQ
- Cook for 2-3 mins on each side until nicely charred and melted
- Now they are ready to serve as they are or they can be sliced into sticks and served with a condiment of your choice
