The Ottimo Searsmith 18-inch Kamado brings the heat-retention advantages of ceramic cooking into a more compact format than the largest kamados. The insulated ceramic body is designed to hold a stable temperature efficiently, while adjustable airflow lets you move between high-temperature searing and slower indirect cooking. Kamado construction also makes the BBQ suitable for roasting and smoking as well as conventional grilling. Its smaller footprint makes it easier to accommodate than a 24-inch ceramic model, although the thick ceramic construction still makes this a substantial piece of equipment. It's considerably more expensive than a steel charcoal grill, but enthusiastic cooks are paying for temperature stability and versatility.
